cranberry cookie bars ~

Always looking for more recipes for Cranberries !!! Found this one in my Cape Cod cookbook. It is very good ! I only had a 13 1/2 by 9 1/2 inch glass baking pan, sooo they would be thicker in a regular 13x9" pan. Hope you enjoy ~ could try using other fruits, such as blueberries which is what I am going to try next time I make this !

Ingredients

  • 1 1/2 cups sifted all purpose flour (sift before measuriing)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 - eggs
  • 1 teaspoon vanilla ( iused almond extract)
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup walnuts or pecans (optional)

How To Make cranberry cookie bars ~

  • Step 1
    Preheat oven to 350 degrees Grease a 9 X 13 inch pan.
  • Step 2
    In a bowl sift together sifted flour, baking powder and salt. (Yes sift the flour before measuring it)
  • Step 3
    In a second bowl , cream butter and both sugars. Add eggs one at a time, beating until fluffy. Add vanilla. (or almond flavoring)
  • Step 4
    Blend in dry ingredients. Stir in chopped cranberries and nuts. Spread in greased pan.
  • Step 5
    Bake 30 minutes. When cool, cut into bars. Do not overbake ( Mine only took 24 minutes) because of the amount of sugar, cookie dough tends to become hard and stick to the pan if overbaked.
