cranberry cookie bars ~
Always looking for more recipes for Cranberries !!! Found this one in my Cape Cod cookbook. It is very good ! I only had a 13 1/2 by 9 1/2 inch glass baking pan, sooo they would be thicker in a regular 13x9" pan. Hope you enjoy ~ could try using other fruits, such as blueberries which is what I am going to try next time I make this !

Ingredients
- 1 1/2 cups sifted all purpose flour (sift before measuriing)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter or margarine
- 1 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 2 - eggs
- 1 teaspoon vanilla ( iused almond extract)
- 1 cup fresh or frozen cranberries, chopped
- 1/2 cup walnuts or pecans (optional)
How To Make cranberry cookie bars ~

Step 1Preheat oven to 350 degrees Grease a 9 X 13 inch pan.

Step 2In a bowl sift together sifted flour, baking powder and salt. (Yes sift the flour before measuring it)

Step 3In a second bowl , cream butter and both sugars. Add eggs one at a time, beating until fluffy. Add vanilla. (or almond flavoring)

Step 4Blend in dry ingredients. Stir in chopped cranberries and nuts. Spread in greased pan.

Step 5Bake 30 minutes. When cool, cut into bars. Do not overbake ( Mine only took 24 minutes) because of the amount of sugar, cookie dough tends to become hard and stick to the pan if overbaked.
