Mom said Gram passed this recipe down to her...matters not to me where it came from it's delicious...had everything to make it for weeks, and finally got around to it...my kids thanked me with a big smile...lol! I've seen many variations of this recipe, but never this exact recipe...I figure there's always room for another... Enjoy! My photos

Ingredients For cheery cherry delite - cass

  • FOR THE CRUST
  • 1 c
    butter, softened
  • 1/2 c
    brown sugar, lightly packed
  • 2 c
    flour
  • 1 c
    chopped pecans
  • FILLING
  • 1 - 8 oz
    cream cheese, softened
  • 8 - 12 oz
    cool whip - i usually add 12
  • 1 c
    confectioners' sugar
  • 1 tsp
    vanilla extract
  • 1/4 tsp
    almond extract
  • 2 can
    cherry pie filling

How To Make cheery cherry delite - cass

    Preheat oven to 375 degree F. Get out a 9 x 13 baking dish. Set aside. In a medium bowl, cream the butter with the brown sugar. Once fluffy, mix in the flour until well blended. Stir in the pecans. Spread onto the bottom of the baking dish evenly.

    Bake for 15 minutes. Take from oven and while crust is hot, take a fork and crumble the crust. Set aside to cool.

    Once crust is cool, prepare filling. In a medium sized bowl, mix the cream cheese with the confectioners' sugar until creamy and well blended. Mix in the extracts. Fold in the cool whip until there is no visible streaks of cream cheese.

    Spread this mixture over the crust evenly. Spread the 2 cans of pie filling over the top. Cover and refrigerate several hours before serving. *** This dessert needs to be taken from the fridge about 30 minutes before serving, so is easier to cut and serve....or before serving, place bottom of dish in some warm water... Enjoy!
