One of my sons favorite blueberry desserts. My friend Linda shared this recipe with me, although I've tweaked it some. I've also added spice to the recipe, hers had none. Enjoy!

Ingredients For ~ blueberry crumb dessert ~

  • 3 c
    flour
  • 1 tsp
    baking powder
  • 1 c
    sugar
  • 1/4 tsp
    salt
  • 1
    zested lemon
  • 1 c
    cold, butter - sliced into pieces
  • 1
    egg
  • FILLING
  • 5 - 6 c
    fresh blueberries
  • 1/2 - 2/3 c
    sugar
  • 5 tsp
    corn starch
  • juice
    of lemon
  • 1/4 tsp
    cinnamon
  • 1/8 tsp
    nutmeg
  • pinch
    salt

How To Make ~ blueberry crumb dessert ~

    Preheat oven to 375 degree F. Combine sugar, flour and baking powder, in food processor. Add the salt, zest, pulse a few times. Add the egg and butter chunks and pulse just until crumbly. ( This can also be done in a bowl with 2 knives or a pastry blender.) In a 9 x 13 baking dish, spread half of the crumb mixture evenly into the bottom of the dish. In another bowl, mix the sugar, blueberries, corn starch, cinnamon, nutmeg, salt and lemon juice. Spread mixture over the crust. Sprinkle remaining batter over the top of the blueberries, by pinching off pieces of the dough. Place evenly. Bake for 40 - 45 minutes or until beginning to turn golden. Cool completely before serving. Enjoy!
