The season for wild blueberries will soon be here and this recipe can be made with the wild berries or the cultivated ones which are cheaper and nearly as tasty.

  • 2 c
    all purpose flour
  • 1/2 c
    granulated sugar
  • 1/2 tsp
  • 1/2 tsp
  • 1/2 c
    chilled canola oil

  • 2 pkg
    8 ounce each cream cheese
  • 1/2 c
  • 1/4 c
    35% whipping cream
  • 2 tsp
    each vanilla and lemon zest
  • 2
  • 1 1/2 c
    blueberries, fresh
  • 1/4 c
    chopped pecans

How to Make Blueberry Cheesecake Bars


  1. Heat oven to 375F...Base.....Stir flour with sugar and salt..drizzle with oil and mix together...Press all but 1/3 cup into foil lined 9 inch square pan. Bake 15 minutes or until edges are golden. Remove from oven and set aside to prepare filling.
  2. Beat cream cheese with sugar whipping cream.vanilla and lemon zest. beat until very smooth..On low speed mix in eggs until all wellcombined.
  3. Scatter half the berries over crust , pour cream cheese mix over berries and scatter with remaining berries and add remaining crumbs and nuts on top.
  4. Bake for 25 minutes or until cheesecake is just slightly jiggly in the to room temperature before cutting into squares.
