egg yolks, slightly beaten
sliced apples, using either rome, golden delicious, granny smith or jonathan
sifted powdered sugar
1In a large bowl, stir together the flour, sugar, baking powder and salt.
2Cut in butter, until pieces are the size of small peas.
3Stir in the almonds and eggs with a fork. Press half the mixture (about 2 cups) into the bottom of an ungreased 13x9x2-inch baking pan; set pan aside.
4In another large bowl, stir together the 3/4 cup sugar, 1/4 cup flour, cinnamon and nutmeg.
5Add the apples; toss to coat, then arrange evenly over mixture in pan.
6Bake in a 350º oven for about 35 minutes, or until topping is golden brown.
8Drizzle bars with icing, and let stand until set, then cut into bars.
9To make the icing: In a small bowl stir together until smooth, the powdered sugar, milk, and almond extract.
