These cookies are a perfect treat for any occassion. They are a moist, cake like cookie. These are a nice after-school snack too! You could also mix it up and add nuts, coconut or regular chocolate chips.

Ingredients

  • 1/2 c
    applesauce, unsweetened
  • 1/2 c
    vegetable oil
  • 1/2 c
    sugar
  • 1/4 c
    light brown sugar, firmly packed
  • 1 large
    egg
  • 1 tsp
    vanilla extract
  • 1 tsp
    baking soda
  • 1 tsp
    milk (i like whole best)
  • 2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 10 oz
    white chocolte chips
  • 5 oz
    dried cranberries

How to Make White Chocolate Cranberry Cookies

Step-by-Step

  1. In small bowl dissolve baking soda in milk. Set aside. Preheat oven to 375 degrees.
  2. In large bowl mix sugars, applesauce, egg, oil and vanilla with wooden spoon.
  3. Add to sugar mixture the flour, baking powder, salt and dissolved baking soda mixture. Mix until all is combined. Stir in white chocolate and cranberries.
  4. Line baking sheets with parchment paper. using approx. 1/2 oz. scoop drop cookies on sheet 2 in. apart. Bake 10 min. or until a light golden color. Before moving to wire racks to cool let sit on pan 10 min.
  5. Tip: For more even baking place only one sheet in the oven at a time.
