I was experimenting in the kitchen and threw these lovely little bars together. I like them without the frosting but my sons really liked the Coconut Cream Cheese Frosting addition. Next time I make these (and there will be a next time) I think I will try a different flavor pudding mix...maybe banana or coconut just to see how that changes them. ***These taste even better on the 2nd day!!

How to Make Tropical White Chocolate Bars

Step-by-Step

  1. Preheat oven to 350 degrees F. Lightly spray a 13x9 baking dish with nonstick spray.
  2. In a bowl, combine flours and baking soda. Add in ground flax if using. Set aside.
  3. In a separate bowl, combine butter, sugars, pudding mix and vanilla; beat until creamy. Beat in eggs. Gradually add in flour mixture--batter will be stiff! Stir in nuts, chips and coconut. Spread into prepared dish.
  4. Bake for about 20 minutes. Allow to cool completely before frosting.
  5. Meanwhile, place ingredients for frosting in a bowl and blend with electric mixer until creamy. Frosting should be thick but spreadable. Add extra coconut milk, if needed, to get to desired consistency.
