tropical white chocolate bars

I was experimenting in the kitchen and threw these lovely little bars together. I like them without the frosting but my sons really liked the Coconut Cream Cheese Frosting addition. Next time I make these (and there will be a next time) I think I will try a different flavor pudding mix...maybe banana or coconut just to see how that changes them. ***These taste even better on the 2nd day!!

Ingredients

  • 2 cups flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon fresh ground flaxseed (optional)
  • 1 cup butter or margarine
  • 3/4 cup light brown sugar, firmly packed
  • 1/4 cup sugar
  • 1 ounce box white chocolate sugar free pudding mix
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1/2 cup macadamia nuts, chopped
  • 1 cup white chocolate chips
  • 1/4 cup toasted flaked coconut
  • COCONUT CREAM CHEESE FROSTING:
  • 1 1/4 cups powdered sugar
  • 2 tablespoons butter, softened
  • 2 ounces neufchatel or cream cheese, softened
  • 2 teaspoons coconut milk, unsweetened
  • 1/4 teaspoon coconut extract

How To Make tropical white chocolate bars

  • Step 1
    Preheat oven to 350 degrees F. Lightly spray a 13x9 baking dish with nonstick spray.
  • Step 2
    In a bowl, combine flours and baking soda. Add in ground flax if using. Set aside.
  • Step 3
    In a separate bowl, combine butter, sugars, pudding mix and vanilla; beat until creamy. Beat in eggs. Gradually add in flour mixture--batter will be stiff! Stir in nuts, chips and coconut. Spread into prepared dish.
  • Step 4
    Bake for about 20 minutes. Allow to cool completely before frosting.
  • Step 5
    Meanwhile, place ingredients for frosting in a bowl and blend with electric mixer until creamy. Frosting should be thick but spreadable. Add extra coconut milk, if needed, to get to desired consistency.
