Ingredients
- 1 cup sugar plus three tablespoons on the side
- 1/2 cup dark brown sugar
- 1/4 cup dark molasses
- 3 cups unbleached wheat flour
- 2 teaspoons ginger powder
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons cinnamon, ground
- 1/4 teaspoon clove, ground
- 2 tablespoons fresh ginger,minced very fine
- 1 large egg,beaten
- 1 tablespoon water,cold
- 3/4 cup unsalted butter,softened
How To Make soft ginger cookies

Step 1Sift together all of the dry ingredients,except the sugars. Cream the butter with the sugars,add in the egg,water and molasses.

Step 2Slowly add in the dry ingredients the the fresh ginger. Roll the cookies into walnut sized balls the roll them in the reserved three tablespoons of sugar to coat.

Step 3Place them on your baking sheet,two inches apart,about nine per sheet. Bake in a pre-heated 350 degree oven for ten minutes. Let cool on the baking sheet for ten minutes,move to a wire rack to cool completely. Store them in a plastic Tupperware container,enjoy!! :)
