Ingredients For soft ginger cookies

  • 1 c
    sugar plus three tablespoons on the side
  • 1/2 c
    dark brown sugar
  • 1/4 c
    dark molasses
  • 3 c
    unbleached wheat flour
  • 2 tsp
    ginger powder
  • 1/4 tsp
    salt
  • 1 tsp
    baking soda
  • 2 tsp
    cinnamon, ground
  • 1/4 tsp
    clove, ground
  • 2 Tbsp
    fresh ginger,minced very fine
  • 1 lg
    egg,beaten
  • 1 Tbsp
    water,cold
  • 3/4 c
    unsalted butter,softened

How To Make soft ginger cookies

    Sift together all of the dry ingredients,except the sugars. Cream the butter with the sugars,add in the egg,water and molasses.

    Slowly add in the dry ingredients the the fresh ginger. Roll the cookies into walnut sized balls the roll them in the reserved three tablespoons of sugar to coat.

    Place them on your baking sheet,two inches apart,about nine per sheet. Bake in a pre-heated 350 degree oven for ten minutes. Let cool on the baking sheet for ten minutes,move to a wire rack to cool completely. Store them in a plastic Tupperware container,enjoy!! :)
