Found this recipe on another website, but I did make a couple of changes because they didn't make sense in the original instructions.

    graham crackers, crushed
  • 1/2 c
    butter, melted
  • 3/4 c
  • 1/2 c
    brown sugar
  • 1/2 c
    butter, softened
  • 1
  • 1/2 tsp
  • 1 1/4 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
  • 1 c
    chocolate chips
  • 1/2 c
    marshmallows, mini (plus a few more for top)
  • 1
    large hershey bar (with 16 sections)

How to Make S'Mores Cookie Bars


  1. Grease an 8" square baking pan. Combine graham cracker crumbs and melted butter. Place in bottom of pan and press down to form a crust.
  2. Cream softened butter; add in sugars and cream again until fluffy. Add in egg and vanilla. Mix again.
  3. Combine four, baking soda, and salt, then add to butter mixture and mix. Fold in chocolate chips and marshmallows.
  4. Spoon cookie dough on top of cookie crust as evenly as possible (don't worry about spreading perfectly, dough will spread as it cooks to fill in any gaps).
  5. Bake in preheated 350-degree oven for about 20 minutes.
  6. 8-10 minutes before bars are done cooking, sprinkle extra marshmallows on top to decorate; return to oven for remaining time. Break candy bar into sections.
  7. Remove pan from oven and carefully place candy pieces on top. Cool completely before cutting.
