s'mores cookie bars

Found this recipe on another website, but I did make a couple of changes because they didn't make sense in the original instructions.

Ingredients

  • 1 1/2 cups graham crackers, crushed
  • 1/2 cup butter, melted
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 - egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup marshmallows, mini (plus a few more for top)
  • 1 - large hershey bar (with 16 sections)

How To Make s'mores cookie bars

  • Step 1
    Grease an 8" square baking pan. Combine graham cracker crumbs and melted butter. Place in bottom of pan and press down to form a crust.
  • Step 2
    Cream softened butter; add in sugars and cream again until fluffy. Add in egg and vanilla. Mix again.
  • Step 3
    Combine four, baking soda, and salt, then add to butter mixture and mix. Fold in chocolate chips and marshmallows.
  • Step 4
    Spoon cookie dough on top of cookie crust as evenly as possible (don't worry about spreading perfectly, dough will spread as it cooks to fill in any gaps).
  • Step 5
    Bake in preheated 350-degree oven for about 20 minutes.
  • Step 6
    8-10 minutes before bars are done cooking, sprinkle extra marshmallows on top to decorate; return to oven for remaining time. Break candy bar into sections.
  • Step 7
    Remove pan from oven and carefully place candy pieces on top. Cool completely before cutting.
