My husband LOVES home made peanut butter cookies! I got tired of the same peanut butter cookie and wanted to spin it a little! The added salt does something amahhhzin to the peanut butter and plays out nicely with the honey. You won't believe your taste buds! This is what I came up with and it is dearly loved in my circle of family and friends! Hope you enjoy it as well :)

Ingredients

  • 1 c
    jif creamy peanut butter
  • 1/2 c
    crushed salted peanuts (may be omitted)
  • 1/2 c
    butter crisco all-vegetable shortening
  • 1/2 c
    firmly packed brown sugar
  • 1/2 c
    granulated sugar
  • 1/2 c
    honey
  • 3 Tbsp
    milk
  • 1 tsp
    vanilla extract
  • 1
    large egg
  • 1 3/4 c
    all purpose flour
  • 3/4 tsp
    baking soda
  • 1 1/2 tsp
    salt

How to Make Salted Honey Nut Cookies

Step-by-Step

  1. Cream together shortening, peanut butter, honey, nuts and sugars well.
  2. gently mix in egg, vanilla, and milk until well incorporated.
  3. mix in flour,baking soda and salt.
  4. refrigerate mixture for 30 minutes and preheat oven to 375 degrees while chilling the dough.
  5. roll into 2 teaspoon balls (I use a 2 tsp scoop now!) drop onto un-greased cookie sheet, cross pattern with fork tines and bake for 6-8 minutes.
