Ingredients
- 4 cups flour
- 1 teaspoon bakn soda
- 1 teaspoon salt
- 3 - eggs
- 2 cups sugar
- 1 pound ricotta (i used part skim)
- 1 stick butter flavored shortenn
- 3 teaspoons almond extract, divided 1 & 2 tsp
- 1 cup almonds...chpd very fine (almost ground)
- 3 cups confectioners sugar
- 3 tablespoons water
- 1/2 cup almonds roughly chpd for garnish

Step 1PREHEAT OVEN TO 350. COAT BAKN SHEETS WITH COOKN SPRAY (I USED PARCHMENT PAPER) IN A LARGE BOWL SIFT TOGETHER FLOUR, BAKN SODA N SALT.

Step 2IN ANOTHER LARGE BOWL , WITH AN ELECTRIC MIXER BEAT EGGS, SUGAR, RICOTTA CHEESE, SHORTENN AND 1 TSP OF ALMOND EXTRACT UNTIL SMOOTH.

Step 3ALTERNATELY ADD FLOUR MIXTURE AND FINELY CHPD ALMONDS TO RICOTTA MIXTURE N BEAT UNTIL WELL BLENDD.

Step 4DROP BY TABLESPOONFULS ONTO PREPARED BAKN SHEETS N BAKE FOR 15 MINUTES OR UNTIL BOTTOMS R GOLDEN.

Step 5REMOVE TO WIRE RACK N LET COOL COMPLETELY B4 FROSTN.

Step 6MEANWHILE IN A MEDIUM BOWL COMBINE CONFECTIONERS SUGAR, WATER N REMAINN ALMOND EXTRACT. (MORE CONF SUGAR AND/OR WATER MAY B NEEDD TO REACH DESIRED CONSISTANCY) DRIZZLE ONTOP OF COOLD COOKIE N SPRINKLE ROUGHLY CHPD ALMONDS....ENJOY :)
