This recipe was originally from an old Company's Coming cookbook. We have had the recipe in the family for years. I decided to make it again, because my daughter is eating without gluten, and this will be an amazing treat for her. I wish I had videoed my husband's first bite of this treat. He gasped with delight! I can't believe the flavour that comes from such a simple combination! Don't taste them while they are hot because the moist centre can give you a bad burn. 1 cup of brown sugar, packed
1 teaspoon of vanilla
2 cups of pecan halves, whole

How to Make Practically Illegal Pecan Bites

Step-by-Step

  • 1Beat the egg white until soft peaks form.
  • 2Add brown sugar and beat until the mixture is stiff.
  • 3Mix in the vanilla, and fold in the nuts.
  • 4Drop by teaspoon onto a greased baking pan, or a pan lined with a Silpat.
  • 5Bake at 300 degrees F for 20 minutes.
