pineapple jumbles

These are one of my top favorite cookies. Usually only make them around Christmas time but they are a big hit!

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup sour cream
  • 1 - egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1 cup coarsely chopped walnuts
  • 1 cup finely chopped candied pineapple

How To Make pineapple jumbles

  • Step 1
    Preheat oven 375 degrees. In a large bowl, cream butter and sugars until fluffy. Add sour cream,egg,and vanilla; beat until smooth.
  • Step 2
    In a small bowl, combine flour, baking soda, and salt. Add dry ingredients to creamed mixture; stir until a soft dough forms. Stir in remaining ingredients.
  • Step 3
    Drop tablespoonfuls of dough 2 inches apart onto a greased baking sheet.
  • Step 4
    Bake 10-12 minutes or until edges are lightly browned. Transfer cookies to a wire rack to cool.
