Ingredients
- 1 - prepared single pie crust. ( such as pillsbury)
- 2 tablespoons butter, melted
- 1/2 cup pecans, chopped
- 1/3 cup brown sugar
- 1/4 cup light corn syrup
- 2 - eggs
- 1/2 teaspoon salt
- 1/4 cup chocolate chips, optional
How To Make pecan pie cookies

Step 1Preheat oven to 400 degrees. In large non-stick pan, combine butter, pecans, brown sugar, corn syrup, salt and eggs. Cook on top of stove, over med-low heat until just slightly thickened. ( about the consistency of pudding). Remove from heat and set aside.

Step 2Unroll pie crust, and using a 3 " cookie cutter, cut into circles. Fold about 1/8 - 1/4 " up on edges.

Step 3Spoon 1 Tbs. of pecan mixture into each circle. Place on parchment lined pan and bake 8 min. or until filling is just set. Remove from oven and cool on wire rack.

Step 4If desired, Place chocolate chips in small ziploc bag and microwave about 15 seconds or until mostly melted. Snip corner and drizzle cookies. Cool until set.
