These are really good. A nice cookie for Christmas.

Ingredients

  • 1 - prepared single pie crust. ( such as pillsbury)
  • 2 tablespoons butter, melted
  • 1/2 cup pecans, chopped
  • 1/3 cup brown sugar
  • 1/4 cup light corn syrup
  • 2 - eggs
  • 1/2 teaspoon salt
  • 1/4 cup chocolate chips, optional

How To Make pecan pie cookies

  • Step 1
    Preheat oven to 400 degrees. In large non-stick pan, combine butter, pecans, brown sugar, corn syrup, salt and eggs. Cook on top of stove, over med-low heat until just slightly thickened. ( about the consistency of pudding). Remove from heat and set aside.
  • Step 2
    Unroll pie crust, and using a 3 " cookie cutter, cut into circles. Fold about 1/8 - 1/4 " up on edges.
  • Step 3
    Spoon 1 Tbs. of pecan mixture into each circle. Place on parchment lined pan and bake 8 min. or until filling is just set. Remove from oven and cool on wire rack.
  • Step 4
    If desired, Place chocolate chips in small ziploc bag and microwave about 15 seconds or until mostly melted. Snip corner and drizzle cookies. Cool until set.
