These are also called Mexican Wedding Cakes, and they're my favorite cookie. A cup of hot chocolate laced with a smidge of cognac and a plate of these cookies in front of a roaring fire on a cold winter's night. Nothing better.

Ingredients

  • 1 stick unsalted butter at room temperature
  • 2 tablespoons superfine sugar
  • 1 cup coarsely ground pecans
  • 1 tablespoon good vanilla extract
  • 1 cup (about) confectioner's sugar

How To Make pecan balls

  • Step 1
    Preheat oven to 325 degrees.
  • Step 2
    In a large bowl, cream the butter and superfine sugar until light. Gradually add the flour, ground pecans and vanilla, and mix well.
  • Step 3
    Shape into 1" balls, and put 2" apart on an ungreased cookie sheet. Bake for 20-25 minutes or until the edges just turn a very light golden brown.
  • Step 4
    Gently remove the cookies from the baking sheet and put on a cake rack to cool completely. Don't get too excited about this step or the cookies will crumble.
  • Step 5
    Put the confectioner's sugar in a flatish bowl. When cool, roll each cookie in the confectioner's sugar.
  • Step 6
    Depending on the size of the pecan balls, you should get 28-30 balls per batch.
