pecan balls
These are also called Mexican Wedding Cakes, and they're my favorite cookie. A cup of hot chocolate laced with a smidge of cognac and a plate of these cookies in front of a roaring fire on a cold winter's night. Nothing better.

Makes 25-30 cookies
Ingredients
- 1 stick unsalted butter at room temperature
- 2 tablespoons superfine sugar
- 1 cup coarsely ground pecans
- 1 tablespoon good vanilla extract
- 1 cup (about) confectioner's sugar
How To Make pecan balls

Step 1Preheat oven to 325 degrees.

Step 2In a large bowl, cream the butter and superfine sugar until light. Gradually add the flour, ground pecans and vanilla, and mix well.

Step 3Shape into 1" balls, and put 2" apart on an ungreased cookie sheet. Bake for 20-25 minutes or until the edges just turn a very light golden brown.

Step 4Gently remove the cookies from the baking sheet and put on a cake rack to cool completely. Don't get too excited about this step or the cookies will crumble.

Step 5Put the confectioner's sugar in a flatish bowl. When cool, roll each cookie in the confectioner's sugar.

Step 6Depending on the size of the pecan balls, you should get 28-30 balls per batch.
