How To Make peanut butter glazed chocolate cookies
-
Step 1Heat oven to 350. In medium bowl, combine cookie mix (and enclosed flavor packet), cocoa, egg, and water; mix with spoon or fork until thoroughly blended. To form base for cookies, on cookie sheet, arrange 3 pecan halves with tips touching in center. Repeat for each cookie. Shape dough into 1 inch balls; gently press one ball onto each pecan cluster until pecans adhere.
-
Step 2Bake 8-10 minutes or until almost set; do not overbake. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Place wax paper or foil under rack of cookies. Gently spoon or drizzle thin coating of Peanut Butter Glaze onto each cookie. Allow glaze to set.
-
Step 3For Peanut Butter Glaze: In top of double boiler over hot, not boiling water, melt 1 cup peanut butter chips and 2 tablespoons shortening (not butter or oil), stirring constantly to blend; remove from heat and use immediately. OR in small microwave safe bowl, place peanut chips with shortening. Microwave at HIGH (100%) 45 seconds; stir. If necessary, microwave at HIGH additional 15 seconds or until melted and smooth when stirred. Use immediately.
