peacan 'pie' cookies without the crust

Ingredients
- 1 cup karo syrup light or dark
- 3 - eggs
- 1 cup sugar
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 3 cups peacans chopped (24 oz)
How To Make peacan 'pie' cookies without the crust

Step 1Beat eggs.

Step 2Mix in Karo syrup, sugar, melted butter, vanilla extract, and beaten eggs.

Step 3Mix in chopped peacans.

Step 4Let mixture stand in the refrigerator overnight. This allows the peacans to soak up all of the juices.

Step 5Next day, preheat oven to 325 degrees. Use wax paper on cookie sheet. Drop mixture in 1 inch balls. Bake on center rack for about 5 to 7 minutes.

Step 6NOTE: High altitudes areas need to lessen the sugar to 2/3 and increase the butter to 3 tablespoons.
