2 Tbspmelted butter
1 tspvanilla extract
3 cpeacans chopped (24 oz)
How to Make Peacan 'pie' Cookies without the crust
- Beat eggs.
- Mix in Karo syrup, sugar, melted butter, vanilla extract, and beaten eggs.
- Mix in chopped peacans.
- Let mixture stand in the refrigerator overnight. This allows the peacans to soak up all of the juices.
- Next day, preheat oven to 325 degrees. Use wax paper on cookie sheet. Drop mixture in 1 inch balls. Bake on center rack for about 5 to 7 minutes.
- NOTE: High altitudes areas need to lessen the sugar to 2/3 and increase the butter to 3 tablespoons.
