karo syrup light or dark

vanilla extract

peacans chopped (24 oz)

How to Make Peacan 'pie' Cookies without the crust


  • 1Beat eggs.
  • 2Mix in Karo syrup, sugar, melted butter, vanilla extract, and beaten eggs.
  • 3Mix in chopped peacans.
  • 4Let mixture stand in the refrigerator overnight. This allows the peacans to soak up all of the juices.
  • 5Next day, preheat oven to 325 degrees. Use wax paper on cookie sheet. Drop mixture in 1 inch balls. Bake on center rack for about 5 to 7 minutes.
  • 6NOTE: High altitudes areas need to lessen the sugar to 2/3 and increase the butter to 3 tablespoons.
