Ingredients

  • 1 cup karo syrup light or dark
  • 3 - eggs
  • 1 cup sugar
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 3 cups peacans chopped (24 oz)

How To Make peacan 'pie' cookies without the crust

  • Step 1
    Beat eggs.
  • Step 2
    Mix in Karo syrup, sugar, melted butter, vanilla extract, and beaten eggs.
  • Step 3
    Mix in chopped peacans.
  • Step 4
    Let mixture stand in the refrigerator overnight. This allows the peacans to soak up all of the juices.
  • Step 5
    Next day, preheat oven to 325 degrees. Use wax paper on cookie sheet. Drop mixture in 1 inch balls. Bake on center rack for about 5 to 7 minutes.
  • Step 6
    NOTE: High altitudes areas need to lessen the sugar to 2/3 and increase the butter to 3 tablespoons.
