    karo syrup light or dark
  • 3

  • 2 Tbsp
    melted butter
  • 1 tsp
    vanilla extract
  • 3 c
    peacans chopped (24 oz)

How to Make Peacan 'pie' Cookies without the crust


  1. Beat eggs.
  2. Mix in Karo syrup, sugar, melted butter, vanilla extract, and beaten eggs.
  3. Mix in chopped peacans.
  4. Let mixture stand in the refrigerator overnight. This allows the peacans to soak up all of the juices.
  5. Next day, preheat oven to 325 degrees. Use wax paper on cookie sheet. Drop mixture in 1 inch balls. Bake on center rack for about 5 to 7 minutes.
  6. NOTE: High altitudes areas need to lessen the sugar to 2/3 and increase the butter to 3 tablespoons.
