This was my great aunt Merline's recipe. My kids love these cookies at Christmas time.

Ingredients

  • 1 c
    sugar
  • 1 c
    shortening
  • 1 c
    packed brown sugar
  • 2
    eggs
  • 1 tsp
    vanilla
  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 c
    quick cooking rolled oats
  • 2 c
    (12 oz.) candy orange slices
  • 1 c
    flaked coconut

How to Make Orange Slice Cookies

Step-by-Step

  1. Cut orange slices into pieces. The easiest way is to snip them with kitchen shears.
  2. In a large mixer bowl, cream together sugar, brown sugar and shortening until until fluffy.
  3. Add eggs and vanilla and mix well.
  4. Stir together flour, baking powder, baking soda and salt.
  5. Stir the dry ingredients into the creamed mixture mixing well.
  6. stir in candy and coconut.
  7. Using about 1 Tbsp. mixture for each, roll into 1 inch balls.
  8. Place the balls on a cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until lightly browned.
  9. Remove from sheet and cool on a wire rack.
