These are great for a snack with a cup of coffee or tea, or a glass of cold milk. They also make great 'grab and go,' breakfast treats as you head out the door.

    1/2 cup sugar
  • ·
    1/2 cup brown sugar
  • ·
    1/2 cup butter
  • ·
    2 teaspoons grated orange zest
  • ·
    1/4 cup orange juice
  • ·
    2 large eggs
  • ·
    1 teaspoon vanilla extract
  • ·
    1 cup oatmeal
  • ·
    1 cup flour
  • ·
    1/2 teaspoon baking powder
  • ·
    1/2 teaspoon baking soda
  • ·
    1/2 teaspoon salt
  • ·
    1½ cups dried cranberries
  • ·
    2/3 cup chopped nuts (i used pecans)

How to Make Orange Oatmeal Cranberry Cookies

Step-by-Step

  1. Preheat the oven to 350º F. Line two baking sheets with parchment paper.
  2. In a medium bowl, cream together the sugars and butter. Thoroughly whisk in the orange juice, orange zest, vanilla and eggs.
  3. Stir in the oatmeal, flour, baking powder, baking soda and salt. Mix in the dried cranberries and nuts.
  4. Spoon tablespoonfuls of batter onto prepared baking sheets.
  5. Bake for about 12 minutes or until just beginning to turn brown around the edges. Remove cookies to a wire rack to cool.
