oatmeal raisin cookies (adapted from quaker oats)
My neighbor upstairs children loves these cookies their mother doesn't know how to bake I been trying to teach her but to no avail she not picking it up. My grandson doesn't like sweets only fruits. Also a favorite of my oldest daughter who is developmentally challenged (sp).

Preheat oven to 350 deg. makes 4 dozen or 24 bar cookies. cook time 8-10 mins.
Ingredients
- 1/2 cup butter softened, plus 6 tablespoons
- 3/4 cup firmly packed brown sugar
- 1/2 cup grandulated sugar
- 2 - eggs
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt (optional)
- 3 cups quaker oats (quick or old fashioned, uncooked
- 1 cup raisins
How To Make oatmeal raisin cookies (adapted from quaker oats)

Step 1In large bowl, beat butter, brown & granulated sugars with mixer on medium speed until creamy. (Butter should be room temperature). Also, I used light brown sugar.

Step 2Add eggs and vanilla; beat well. (large eggs) Bring eggs to room temperature.

Step 3Add combined flour, baking soda, cinnamon & salt mix well

Step 4Add oatmeal & raisins mix well

Step 5Drop dough by round tablespoon on increased cookie sheet. Bake 8 - 10 minutes or until lightly golden brown.

Step 6Cool for one minute on cookie sheet then remove to wire rack. Cool completely. Store tightly covered. Makes about 4 dozen.

Step 7Cookies can be made as Bar Cookies Using a 13 x 9 inch baking pan. Bake 30 - 35 minutes or until lightly golden brown, Cool in pan on wire rack. Cut into bars. Makes about 24 bars.

Step 8Preheat oven @350 deg. Bake 8-10 minutes, depending on your oven adjust cooking time if needed.
