This is a delicious gingerbread cookie recipe. For a fun holiday twist, roll out dough and using a stencil, create simple gingerbread houses with the doorway cut out to perch on your favorite holiday beverage: goes create with coffee or cocoa!

Ingredients

  • 2 cups gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice, ground
  • 1/4 teaspoon cloves
  • 2 teaspoons ginger
  • 1/4 teaspoon sea salt
  • 1 large egg
  • 3/4 cup butter
  • 1/4 cup molasses
  • 1/2 cup brown sugar, firmly packed

How To Make mini gingerbread cookie houses

  • Step 1
    Cream nondairy butter and sugar, add in egg and molasses followed by dry ingredients; wrap and chill dough for a few hours before rolling out thinly between wax paper.
  • Step 2
    Prepare royal icing: Mix 1lb (4 cups) powdered sugar with 1/2 teaspoon cream of tartar and3 egg whites. Whip at high speed at least 7 minutes and keep covered when not decorating (hardens and dries quick).
  • Step 3
    Roll and bake out gingerbread cookies or make little houses: Make a little cardboard cutout of the front (will also be used for the back), little wall cutout (you'll need 2 squares per house) and a longer rectangle for the roof panels (you'll need 2). Bake at 350 for 10 to 15 minutes or until walls are well done and not soft.
