These are absolutely to die for! Ohhhhhhh soooooo good! My husband hates Coconut and he couldn't even tell that they had coconut in them! He loves them! Yes! My coconut hater loves them! They are also selling great for us at the Farmers Markets!

Ingredients
- 1 cup butter~room temp
- 1 cup sugar
- 1 cup brown sugar
- 2 large eggs~lightly beaten
- 2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 cups rice crispies
- 1 cup quick oats
- 1 cup coconut
How To Make lori's ranger cookies

Step 1Preheat oven to 350 degrees. Using a mixer, cream together butter and sugars. Add the two eggs, one at a time and mix well.

Step 2In a separate bowl combine the flour, baking soda, baking powder and salt. Slowly mix into wet mixture. Stir in by hand the quick oats, rice crispies and coconut just until combined. Line baking sheet with parchment paper. Roll dough into 1 inch balls and place on lined cookie . Bake for 10 to 12 minutes or until edges are a golden brown. Allow to slightly cool then remove to a wire cooling rack to finish cooling.
