lisa's soft cookies

My neighbor, Lisa, in 1984 made these for me as a housewarming gift, and I've been making them ever since. Fail-proof, always soft and wonderful, these are the most-requested cookie I get from friends and family. Easy and fun for kids to make too, you can put Easter or Christmas M&M candies in them instead of the chocolate chips. Thanks, Lisa!

Ingredients

  • 1 cup butter, room temperature
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 2 - eggs
  • 1 teaspoon baking soda
  • 1 small pkg dry instant vanilla pudding mix
  • 2 1/4 cups flour
  • 12 ounces semisweet chocolate chips or m&m candies

How To Make lisa's soft cookies

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In an electric mixer bowl, cream butter and brown sugar until light and fluffy, about 2 minutes, on medium high speed.
  • Step 3
    Add vanilla and eggs; beat until combined on medium speed in mixing bowl.
  • Step 4
    Add baking soda and pudding mix; beat on low until combined. Add flour, 1/4 cup at a time, beating on slow speed, until all is added, scraping sides with a rubber spatula.
  • Step 5
    Mix in Chocolate chips by hand. Spoon onto an ungreased cookie sheet, parchment paper or silpat mat for 10-12 minutes, just until set but not too brown.
  • Step 6
    After 2-3 minutes, remove cookies from cookie sheet to cooling rack to cool slightly. Best Warm!
