lemon melt away cookies
I have made these in other flavors, but lemon by far is the most ask for. So buttery they just melt in your mouth.

Ingredients
- 1 cup soft butter, unsalted (2 cubes)
- 1/2 cup powdered sugar
- 2 tablespoons lemon zest, grated
- 4 tablespoons lemon juice
- 1 tablespoon pure vanilla extract
- 2 1/3 cups all purpose flour
- 3 tablespoons corn starch
- 1/4 teaspoon salt
- 3/4 cup powdered sugar for dusting
How To Make lemon melt away cookies

Step 1Preheat oven to 350. Line baking sheets with parchment paper.

Step 2In bowl combine flour, cornstarch and salt, set aside.

Step 3Cream butter and powdered sugar till light and fluffy. Add lemon zest and juice and vanilla, mix well.

Step 4Slowly add flour mixture in 4 additions to the butter mixture. Beating together on low till completely blended in.

Step 5Scoop dough into 1" balls, place on baking sheet and press down with with glass that is dusted lightly with powdered sugar. Bake for 10 to 12 minutes, they should just start to brown on the edges.

Step 6Using a strainer lightly dust with powdered sugar. Now all you need is a cup of tea and just enjoy your cookies!
