- 1 box lemon cake mix
- 2 large eggs, room temperature; divided
- 1/3 cup vegetable oil
- 8 ounces cream cheese, room temperature
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice concentrate
- 1 dash vanilla extract

If you want to pack even more punch of lemon flavor, add lemon zest and a touch more lemon juice or fresh lemon juice to the cream cheese layer.

Step 1Preheat oven to 350 degrees F. In a bowl mix dry cake mix, 1 egg, and 1/3 cup oil until crumbly.

Step 2Reserve 1 cup of mixture. Press the remaining mixture into the bottom of a 9x13 pan. Bake for 15 minutes.

Step 3While the crust is baking, beat cream cheese, sugar, lemon juice, remaining egg, and vanilla extract until creamy.

Step 5Sprinkle reserved crumbs on top.
