peanut butter cookies

It took me a few years to come up with this recipe. Others I tried turned out too greasy or too soft, but this one is just right!

Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup butter
  • 1 cup peanut butter
  • 1 cup brown sugar, firmly packed
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 - eggs

How To Make peanut butter cookies

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    In medium sized bowl measure out dry ingredients (flour, baking soda, & salt) and set aside
  • Step 3
    Using a stand mixer blend together cold butter cut into pats and peanut butter
  • Step 4
    Add sugar and brown sugar to butters and blend till smooth
  • Step 5
    Whisk eggs in a small bowl, then add to dough and mix well
  • Step 6
    Gradually ad dry ingredients until well blended
  • Step 7
    Drop onto ungreased cookie sheet by teaspoonfuls or use a scoop. Press with the tines of a fork dipped in flour, in two directions to create a crisscross pattern on each cookie
  • Step 8
    Bake for 8 - 10 minutes till slightly golden, then cool on waxed paper
