peanut butter cookies

It took me a few years to come up with this recipe. Others I tried turned out too greasy or too soft, but this one is just right!

Ingredients For peanut butter cookies

2 1/2 cflour

2 tspbaking soda

1/4 tspsalt

1 cbutter
-
1 cpeanut butter
-
1 cbrown sugar, firmly packed

1 csugar
-
1/2 tspvanilla extract

2eggs
How To Make peanut butter cookies

1Preheat oven to 350 degrees

2In medium sized bowl measure out dry ingredients (flour, baking soda, & salt) and set aside

3Using a stand mixer blend together cold butter cut into pats and peanut butter
-
4Add sugar and brown sugar to butters and blend till smooth
-
5Whisk eggs in a small bowl, then add to dough and mix well
-
6Gradually ad dry ingredients until well blended
-
7Drop onto ungreased cookie sheet by teaspoonfuls or use a scoop. Press with the tines of a fork dipped in flour, in two directions to create a crisscross pattern on each cookie

8Bake for 8 - 10 minutes till slightly golden, then cool on waxed paper
