These cookies are yummy! Not too tart but just the right amount so you know you are eating a lime cookie. They are made green by adding a little green food coloring.

Ingredients

  • 2 3/4 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/8 tsp
    salt
  • 1 c
    butter
  • 1 1/2 c
    sugar
  • 1
    egg
  • 3-4 Tbsp
    lime juice or key lime juice
  • 1 tsp
    vanilla
  • ·
    zest of one lime
  • ·
    green food coloring
  • FROSTING

  • 4 c
    powdered sugar
  • 1/2 c
    butter
  • 3-4 Tbsp
    lime juice

How to Make Key Lime Cookies

Step-by-Step

  1. Cream butter, sugar and egg. Add lime juice, lime zest and vanilla to creamed mixture. Add a few drops of food coloring to desired green. Add dry ingredients and mix well.
  2. Drop by tablespoon full and bake at 350 for 8 - 10 minutes or until lightly browned. I line my cookie sheets with the dull side of aluminum foil up for easy clean up. You can just pick up the foil and baked cookies and move them to the counter at this point. They will cool there.
  3. You can frost a single cookie but I usually make a sandwich cookie out of them but of course you get less cookies that way.
