After my mother passed away, I was the lucky daughter to receive her old Searchlight cookbook. I found this recipe written by my mother tucked in the cookbook for these wonderful spongy dessert bars. A Christmas favorite.

Ingredients
- 6 - eggs separated
- 1 cup sugar
- 1/4 teaspoon salt
- 1 tablespoon lemon zest, grated
- 1 tablespoon lemon juice
- 1 cup flour
- 1 cup chopped dates
- 1 cup chopped pecans (optional)
- 1 cup confectioner's sugar for rolling.
How To Make hester's date bars

Step 1Beat egg yolks until thick. Add salt, sugar, lemon juice and lemon zest. Mix well. Beat egg whites to soft peak.

Step 2Sift flour and re-measure. Fold into egg mixture. Add dates and nuts. Carefully fold in egg whites. Pour into 8X12 baking dish. Bake in slow oven, 325 degrees for about 40 minutes. Completely cool. Cut into bars and roll in confectioner's sugar.
