Hester's Date Bars
1 Tbsplemon zest, grated
1 Tbsplemon juice
1 cchopped dates
1 cchopped pecans (optional)
1 cconfectioner's sugar for rolling.
How to Make Hester's Date Bars
- Beat egg yolks until thick. Add salt, sugar, lemon juice and lemon zest. Mix well.
Beat egg whites to soft peak.
- Sift flour and re-measure. Fold into egg mixture. Add dates and nuts. Carefully fold in egg whites.
Pour into 8X12 baking dish. Bake in slow oven, 325 degrees for about 40 minutes.
Completely cool. Cut into bars and roll in confectioner's sugar.
