great grandma johnson's pineapple drop cookies

These cookies are wonderfully moist and delicious! My Grandmother made the best cookies and these are some of my favorites. These need to be eaten within a couple days or they loose their moistness (I don't think they'll last that long in your house anyway!).

Ingredients

  • 1/2 cup butter, unsalted
  • 1/2 cup crisco shortening
  • 1 teaspoon salt
  • 1 cup brown sugar, lightly packed
  • 1 teaspoon baking soda
  • 1 tablespoon hot water
  • 4 cups all purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup broken nuts (optional)
  • 8 ounces can crushed pineapple

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Cream the butter and shortening. Add sugar, baking soda, and hot water. Then add the beaten eggs. Stir in salt, vanilla and broken nuts (if using). Add crushed pineapple; mix in flour.
  • Step 3
    Drop onto ungreased cookie sheet, a teaspoon at a time. Cook at 375 degrees for 8 to 10 minutes. Cool on wire rack.
