These cookies are wonderfully moist and delicious! My Grandmother made the best cookies and these are some of my favorites. These need to be eaten within a couple days or they loose their moistness (I don't think they'll last that long in your house anyway!).

butter, unsalted
1/2 c
crisco shortening
1 tsp
1 c
brown sugar, lightly packed
1 tsp
baking soda
1 Tbsp
hot water
4 c
all purpose flour
2 large
eggs, beaten
1 tsp
1 c
broken nuts (optional)
8 oz
can crushed pineapple

How to Make Great Grandma Johnson's Pineapple Drop Cookies


  • 1Preheat oven to 375 degrees.
  • 2Cream the butter and shortening. Add sugar, baking soda, and hot water. Then add the beaten eggs. Stir in salt, vanilla and broken nuts (if using). Add crushed pineapple; mix in flour.
  • 3Drop onto ungreased cookie sheet, a teaspoon at a time. Cook at 375 degrees for 8 to 10 minutes. Cool on wire rack.
