gluten free carrot cake cookies
I adapted this recipe with ingredients I had on hand from one I found online.

Ingredients
- 1/2 cup white rice flour
- 1/2 cup brown rice flour
- 1 cup coconut flour
- 1 teaspoon cinnamon
- 1 teaspoon clove, ground
- 1/2 teaspoon ginger
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup corn oil
- 1 cup sugar
- 2 - eggs
- 1 1/4 cups shredded carrots
- 3/4 cup crushed pineapple
- 1/2 cup raisins
- 1/2 cup nuts (walnut or pecan)
- 4 tablespoons flax meal
- 1/2 cup cream cheese
- 1/4 cup powdered sugar
- 2 tablespoons butter
How To Make gluten free carrot cake cookies

Step 1Preheat oven to 375˚F.

Step 2Combine baking mix, cinnamon, clove, ginger, baking soda and salt in a medium bowl.

Step 3In another bowl, whisk together oil, sugar, eggs and carrots; stir into dry ingredients, along with raisins, walnuts and flaxseed, until thick batter forms.

Step 4Coat 3 baking pans with butter and drop tablespoons of batter onto pans, about 1½-inches apart.

Step 5Bake for about 20 minutes. Transfer to wire rack to cool.

Step 6In a medium bowl, stir together cream cheese and sugar until smooth; spread about 1 teaspoon on each cooled cookie.

Step 7To store, place cookies in an airtight container and refrigerate.
