Ingredients

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon finely ground sea salt
  • 2 sticks salted butter, room temperature (16 tablespoons or 1 cup)
  • 1/3 cup cocoa powder, unsweetened
  • 1 teaspoon espresso powder
  • 1 teaspoon vanilla extract
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 12 ounces semi-sweet chocolate chips
  • 4 ounces premium dark chocolate bar, chopped into small pieces

How To Make gimme cocoa cookies

  • Step 1
    Into medium bowl, sift together flour, baking soda and salt; set aside.
  • Step 2
    In large mixing bowl, using hand held electric mixer (use stand mixer if doubling recipe,) beat butter until fluffy; add cocoa powder, espresso powder and vanilla; beat well.
  • Step 3
    Add sugars and beat until fluffy; add eggs and beat well.
  • Step 4
    Clean mixture from beaters and switch to large, sturdy spoon.
  • Step 5
    Gradually mix in flour mixture until thoroughly combined; add chocolate chips and chocolate bar pieces; mix well; refrigerate for 15 to 20 minutes.
  • Step 6
    Place oven racks in middlemost positions; preheat oven to 375°F; line 2 large baking sheets with parchment paper or aluminum foil.
  • Step 7
    Spoon dough, by rounded teaspoons full, onto prepared baking sheets, spacing at least 2 inches apart.
  • Step 8
    Bake at 375°F for exactly 9 minutes per sheet.
  • Step 9
    Immediately remove baked cookies to wire rack or parchment lined flat surface to cool.
  • Step 10
    Store in airtight container.
