eggless chocolate chip cookies

This recipe is a family favorite when the comfort food and sugar cravings set in. It's vegetarian friendly as it contains no eggs. It can also be gluten-free by substituting the all purpose white flour. If you are not a coconut lover, you can use vanilla extract. Optional: Sprinkle with toasted coconut flakes after removing from oven. You can also fold in 1/2 - 1 cup of walnut pieces (or any nuts of your choice) when adding the chocolate chips for a crunch! Enjoy!

Ingredients
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 sticks butter, softened
- 3/4 cup organic sugar
- 3/4 cup brown sugar
- 2 teaspoons coconut extract
- 2 cups semi sweet chocolate chips; milk chocolate
- 2 - ener-g egg replacer quantity for 2 eggs
How To Make eggless chocolate chip cookies

Step 1Preheat oven to 375°F.

Step 2Stir flour with baking soda and salt.

Step 3Using a stand or hand mixer, beat butter with sugar and brown sugar at medium speed until creamy.

Step 4Add extract flavor and egg replacer, mixing on low speed until Inc.

Step 5Gradually blend dry mixture into the creamed mixture.

Step 6Stir in chocolate and vanilla (white) chips.

Step 7Drop by tablespoon or a very small ice cream scoop onto an ungreased cookie sheet.

Step 8Bake for 10 minutes or until golden brown.

Step 9Serve warm with ice cream à la mode (optional).
