1 1/2 cvanilla wafer cookies, finely crushed

1/2 cpecans, crushed

1/4 cunsalted butter - melted

17vanilla wafer cookies

FILLING
-
2 mediumbanana's - diced
-
2 Tbsppacked, brown sugar
-
1 Tbsplemon juice
-
3 - 8 ozcream cheese, softened

1 1/4 csugar
-
3eggs
-
1 tspbanana extract
-
1 tspvanilla extract
-
1/2 cvanilla wafers , roughly chopped

WHIPPED TOPPING - OR USE STORE BOUGHT

1 cheavy whipping cream
-
2 Tbspsugar

How to Make Banana Cream Cheesecake
- In a small saucepan, combine bananas, lemon juice and brown sugar. Cook over medium heat until sugar dissolves. Remove from heat.
- Before ready to serve...make whipped cream:
Beat whipping cream on low until bubbles start to form, about 30 seconds. Increase to medium speed and beat until it begins to thicken; then beat on high. Just before it reaches the soft peak stage, add the sugar and vanilla; continue to beat on high until stiff peaks form.
Serve with a dollop on the side, or on top of the cheesecake...enjoy!
