On a presidental election year Womens Day usually publishes cookie recipes of the wives of the presidental candidates. Laura Bush had a recipe for cowboy cookies but I felt they needed more than just oatmeal and chocolate chips. I could also have added dried cranberries or raisins, but my family & friends prefer it with coconut instead. Whenever there's a party with lots of people, this is my "to go to" recipe!

Ingredients

  • 3 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 3 sticks unsalted butter
  • 1-1/2 cup granulated sugar
  • 1-1/2 cup light brown sugar
  • 3 - eggs
  • 1 tablespoon vanilla
  • 1 bag chocolate chips
  • 1 bag white chocolate chips
  • 3 cups old fashioned rolled oats
  • 2 cups coconut
  • 2 cups walnuts or pecans

How To Make cowboy cookies amped up!

  • Step 1
    Preheat oven to 350 degrees. Combine in bowl and set aside the flour, baking powder, baking soda, cinnamon and salt
  • Step 2
    In mixing bowl beat on medium speed until smooth and creamy the butter. Gradually beat and combine the granulated and brown sugars; then add eggs, one at a time, beating after each egg
  • Step 3
    Add the vanilla and the reserved dry ingredients. Transfer this mix to a large bowl and add remaining ingredients--batter will be very stiff and hard to mix, but be sure to mix thoroughly
  • Step 4
    Drop onto ungreased cookie sheet--use 1 tbsp, 2 tbsp or even 1/4 c. for each cookie-size is up to you. Bake 15-18 minutes ( rotating cookies halfway thru baking time), or until golden. Remove immediately to rack to cool. This makes TONS of cookies-depending on size you can get 16 dozen! Great for parties
