I got this recipe out of our local weekly newspaper last week. These cookies are so YUMMY, I just had to share.

Ingredients

  • 1 c
    shortening
  • 1 c
    sugar
  • 2
    eggs
  • 1 c
    packed brown sugar
  • 1 tsp
    vanilla
  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    quick cooking oats
  • 2 c
    crisp rice cereal
  • 1 c
    flaked coconut

How to Make Cookie Monsters

Step-by-Step

  1. In a large mixing bowl, cream shortening and sugars until light and fluffy. Then beat in eggs and vanilla.
  2. In a small bowl combine the flour, baking soda, baking powder, and salt.
  3. Gradually add the dry ingredients to the creamed mixture and mix well.
  4. Stir in the oats, coconut and the cereal.
  5. Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  6. Bake in preheated 350 degree oven for 7-9 minutes or until golden brown. Remove to wire racks to cool.
