I first made these cookies for St. Patrick's Day. Green food coloring was added for fun. This is a family favorite and requested often.

Ingredients For coconut macadamia nut cookies
2 c
flour
3/4 c
sugar
1 c
brown sugar, firmly packed
1/2 c
butter ( cold, salted)
1/2 tsp
salt
2
eggs
1 tsp
baking powder
1 tsp
almond extract
2 tsp
vanilla extract
1 c
toasted shredded coconut
1 c
toasted macadamia nuts, coursely chopped
1 Tbsp
pineapple juice concentrate
food coloring optional
How To Make coconut macadamia nut cookies

Preheat oven at 375 degrees.
Mix brown and cane sugars with butter until well blended. Add extracts, eggs and pineapple juice.
Beat well.

Sift flour, salt and baking powder. Slowly add it to the butter and sugar mixture. Beat until smooth.
Mix in coconut and macadamia nuts.

Scoop onto baking sheet with a spoon and bake from 10-15 minutes until lightly browned on the edges.
Remove from baking sheet and place on cooling racks.
