coconut macadamia nut cookies

I first made these cookies for St. Patrick's Day. Green food coloring was added for fun. This is a family favorite and requested often.

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1 cup brown sugar, firmly packed
  • 1/2 cup butter ( cold, salted)
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1 teaspoon baking powder
  • 1 teaspoon almond extract
  • 2 teaspoons vanilla extract
  • 1 cup toasted shredded coconut
  • 1 cup toasted macadamia nuts, coursely chopped
  • 1 tablespoon pineapple juice concentrate
  • - food coloring optional

How To Make coconut macadamia nut cookies

  • Step 1
    Preheat oven at 375 degrees. Mix brown and cane sugars with butter until well blended. Add extracts, eggs and pineapple juice. Beat well.
  • Step 2
    Sift flour, salt and baking powder. Slowly add it to the butter and sugar mixture. Beat until smooth. Mix in coconut and macadamia nuts.
  • Step 3
    Scoop onto baking sheet with a spoon and bake from 10-15 minutes until lightly browned on the edges. Remove from baking sheet and place on cooling racks.
