I first made these cookies for St. Patrick's Day. Green food coloring was added for fun. This is a family favorite and requested often.

Ingredients

2 c
flour
3/4 c
sugar
1 c
brown sugar, firmly packed
1/2 c
butter ( cold, salted)
1/2 tsp
salt
2
eggs
1 tsp
baking powder
1 tsp
almond extract
2 tsp
vanilla extract
1 c
toasted shredded coconut
1 c
toasted macadamia nuts, coursely chopped
1 Tbsp
pineapple juice concentrate
food coloring optional

How to Make Coconut Macadamia Nut Cookies

Step-by-Step

  • 1Preheat oven at 375 degrees.
    Mix brown and cane sugars with butter until well blended. Add extracts, eggs and pineapple juice.
    Beat well.
  • 2Sift flour, salt and baking powder. Slowly add it to the butter and sugar mixture. Beat until smooth.
    Mix in coconut and macadamia nuts.
  • 3Scoop onto baking sheet with a spoon and bake from 10-15 minutes until lightly browned on the edges.
    Remove from baking sheet and place on cooling racks.
