coconut macadamia nut cookies
I first made these cookies for St. Patrick's Day. Green food coloring was added for fun. This is a family favorite and requested often.

Makes 24 cookies
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 1 cup brown sugar, firmly packed
- 1/2 cup butter ( cold, salted)
- 1/2 teaspoon salt
- 2 - eggs
- 1 teaspoon baking powder
- 1 teaspoon almond extract
- 2 teaspoons vanilla extract
- 1 cup toasted shredded coconut
- 1 cup toasted macadamia nuts, coursely chopped
- 1 tablespoon pineapple juice concentrate
- - food coloring optional
How To Make coconut macadamia nut cookies

Step 1Preheat oven at 375 degrees. Mix brown and cane sugars with butter until well blended. Add extracts, eggs and pineapple juice. Beat well.

Step 2Sift flour, salt and baking powder. Slowly add it to the butter and sugar mixture. Beat until smooth. Mix in coconut and macadamia nuts.

Step 3Scoop onto baking sheet with a spoon and bake from 10-15 minutes until lightly browned on the edges. Remove from baking sheet and place on cooling racks.
