Coconut Macadamia Nut Cookies
1 cbrown sugar, firmly packed
1/2 cbutter ( cold, salted)
1 tspbaking powder
1 tspalmond extract
2 tspvanilla extract
1 ctoasted shredded coconut
1 ctoasted macadamia nuts, coursely chopped
1 Tbsppineapple juice concentrate
·food coloring optional
How to Make Coconut Macadamia Nut Cookies
- Preheat oven at 375 degrees.
Mix brown and cane sugars with butter until well blended. Add extracts, eggs and pineapple juice.
- Sift flour, salt and baking powder. Slowly add it to the butter and sugar mixture. Beat until smooth.
Mix in coconut and macadamia nuts.
- Scoop onto baking sheet with a spoon and bake from 10-15 minutes until lightly browned on the edges.
Remove from baking sheet and place on cooling racks.
