Chocolate Orange Sandwich Cookies with Ginger Cheesecake Filling - The combo of chocolate and orange is a classic and one of my favorites. I wanted to create a sandwich cookie with both of those flavors and thought ginger would be a nice complement since it pairs so well with orange. And how can you go wrong with a cheesecake filling!

Ingredients
- 4 ounces cream cheese, softened
- 1 1/2 cups butter, softened, divided
- 2 cups powdered sugar
- 1 tablespoon finely grated fresh ginger
- 1/2 teaspoon kosher salt, divided
- 1 cup firmly packed dark brown sugar
- 1 teaspoon baking powder
- 1 - egg, beaten
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/3 cup dark chocolate cocoa powder
- 1 tablespoon orange zest
- 2 tablespoons orange juice
- - granulated sugar
How To Make chocolate orange sandwich cookies with ginger

Step 1Preheat oven to 300 degrees. Line a large, rimmed baking sheet with parchment paper; set aside.

Step 2In a medium bowl, place the cream cheese and 1/2 cup butter, mix to fully combine. Add in the powdered sugar, a little at a time, mixing well after each addition. Add in the ginger and 1/4 teaspoon salt, mix to combine. Refrigerate until ready to use.

Step 3Cream remaining 1 cup butter in a large bowl; add in the brown sugar, baking powder and remaining 1/4 teaspoon salt, mix to fully combine. Add in the egg and vanilla extract, mix to fully combine. Add in the flour, a little at a time, mixing well after each addition. Add in the cocoa powder, orange zest and orange juice, mix to fully combine.

Step 4Shape dough into 1-inch balls, place 2 inches apart on prepared baking sheet. Dip the bottom of a glass into granulated sugar and flatten each ball to about 1/4-inch thickness.

Step 5Place in preheated oven and bake for 18 minutes until edges of cookies are firm. Cool completely on a wire rack.

Step 6Lay half of the cooled cookies onto work surface, flat side up. Spread approximately 1 1/2 teaspoons of reserved ginger cheesecake mixture onto cookies, top each with a second cookie, flat side down, forming a sandwich cookie.
