Your kids will love these fun little cookies. Tasty chocolate cookies with a light espresso filling. This recipe makes 12 to 16 sandwich cookies.

Ingredients

  • 1/2 cup butter, room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 1/2 cup cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1/8 tablespoon salt
  • 1 cup buttermilk
  • 4 ounces cream cheese
  • 1/2 cup marshmallow cream
  • 1 teaspoon instant coffee powder
  • 1/2 cup heavy cream, whipped
  • 1/2 cup mini chocolate chips
  • 1/2 cup crushed toffee candy bars

How To Make chocolate espresso whoopie cookies

  • Step 1
    1. Heat oven to 375°F. Lightly grease cookie sheet or line with parchment paper.
  • Step 2
    2. Beat butter and sugar in large bowl until well blended. Add egg and vanilla; beat well. Stir together flour, cocoa, baking soda and salt; add alternately with buttermilk to shortening mixture. Drop by teaspoons onto prepared cookie sheet.

    3. Bake 7 to 8 minutes or until cookies spring back when touched lightly in center. Remove from cookie sheet to wire rack. Cool completely.
  • Step 4
    Filling Combine cream cheese, marshmallow crème and coffee granules. Fold mixture into whipped cream. Place 2 cookies, flat sides together, with about 1 tablespoon filling. Roll edges of cookies in crushed toffee and mini chocolate chips.
