Your kids will love these fun little cookies. Tasty chocolate cookies with a light espresso filling. This recipe makes 12 to 16 sandwich cookies.

Ingredients

  • 1/2 c
    butter, room temperature
  • 1 c
    sugar
  • 1 large
    egg
  • 1 tsp
    vanilla extract
  • 1 3/4 c
    flour
  • 1/2 c
    cocoa powder
  • 1 1/4 tsp
    baking soda
  • 1/8 Tbsp
    salt
  • 1 c
    buttermilk
  • 4 oz
    cream cheese
  • 1/2 c
    marshmallow cream
  • 1 tsp
    instant coffee powder
  • 1/2 c
    heavy cream, whipped
  • 1/2 c
    mini chocolate chips
  • 1/2 c
    crushed toffee candy bars

How to Make Chocolate Espresso Whoopie Cookies

Step-by-Step

  1. 1. Heat oven to 375°F. Lightly grease cookie sheet or line with parchment paper.
  2. 2. Beat butter and sugar in large bowl until well blended. Add egg and vanilla; beat well. Stir together flour, cocoa, baking soda and salt; add alternately with buttermilk to shortening mixture. Drop by teaspoons onto prepared cookie sheet.
  3. 3. Bake 7 to 8 minutes or until cookies spring back when touched lightly in center. Remove from cookie sheet to wire rack. Cool completely.
  4. Filling
    Combine cream cheese, marshmallow crème and coffee granules. Fold mixture into whipped cream. Place 2 cookies, flat sides together, with about 1 tablespoon filling. Roll edges of cookies in crushed toffee and mini chocolate chips.
