chocolate cranberry crackle cookies

Holidays at my house are always centered around the food. Everyone is always crowding around the kitchen, trying to see what's on the menu . I usually end up shooing them away because my kitchen is just too small. My sister came up with an idea to have a cook day. We get together, bring whatever it is we want to cook and at the end of the day, we all take a little of everything that was cooked, home. It's been great fun. Sadly, each time there's always something that we didn't have time to make. This is one of the left behinds. Enjoy~

Ingredients

  • 4 ounces unsweetened chocolate, 1 sq = 1 oz, melted and cooled
  • 1/2 cup vegetable oil
  • 2 cups sugar
  • 4 - eggs
  • 2 tablespoons vanilla extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup craisins
  • 1/2 cup chocolate chips
  • 1/2 cup walnuts, chopped
  • 1/2 cup powdered sugar, approximately

How To Make chocolate cranberry crackle cookies

  • Step 1
    In a bowl, combine flour, baking powder and salt, whisk to combine and set aside.
  • Step 2
    In a mixing bowl, beat together, melted chocolate, oil and sugar until creamy. Add vanilla, then eggs, one at a time.
  • Step 3
    Add flour mixture into chocolate mixture and mix to combine. Stir in by hand, craisins, chocolate chips and walnuts, until everything is well incorporated.
  • Step 4
    Pre-heat oven to 350 degrees. Cover cookie sheets with parchment paper, or grease sheets with cooking spray.
  • Step 5
    Place powdered sugar in a large bowl. Drop a teaspoon of cookie dough, I use a small melon baller, into powdered sugar, roll to coat and place on cookie sheet.
  • Step 6
    Bake for 10-12 minutes and cool on wire rack. Enjoy~
