Chewy Strawberry Sugar Cookies

We were given a lot of strawberries so I had to figure out what to do with them so they wouldn't go bad. This is one of the things I came up with and the family loved them. I hope you enjoy them as much as my kids did. I prefer them with fresh strawberries but you can also make them with strawberry extract.

Ingredients

1 c
butter softened
1 1/2 c
granulated sugar
1
egg
3 Tbsp
strawberries or 1 1/2 teaspoon strawberry extract
2 3/4 c
all purpose flour
1/2 tsp
baking powder
1/2 tsp
salt
1 tsp
vanilla
1/2 c
granulated sugar for rolling cookies
1 tsp
red sugar crystals (optional)

How to Make Chewy Strawberry Sugar Cookies

Step-by-Step

  • 1Preheat oven to 350ºF
  • 2Use nonstick cookie sheet or line with parchment paper.
  • 3Blend together butter and sugar for about 3 minutes.
  • 4Add egg to butter and sugar blending well.
  • 5Add strawberries or strawberry extract blending well.
  • 6Stir in flour, baking powder, salt and vanilla with spoon.
  • 7Scoop cookie dough by the teaspoon or tablespoon full depending what size you want the cookies. Roll into a ball.
  • 8Add granulated sugar and red sugar crystals in a large bowl for rolling cookie dough in before baking.
  • 9Roll each ball evenly, completely coating cookie dough.
  • 10Place on baking sheet 1 1/2"-2" apart and lightly press each cookie down.
  • 11Bake 10-15 minutes or until lightly browned.
  • 12Let cool and eat. ENJOY!
