chewy strawberry sugar cookies

We were given a lot of strawberries so I had to figure out what to do with them so they wouldn't go bad. This is one of the things I came up with and the family loved them. I hope you enjoy them as much as my kids did. I prefer them with fresh strawberries but you can also make them with strawberry extract.

Ingredients

  • 1 cup butter softened
  • 1 1/2 cups granulated sugar
  • 1 - egg
  • 3 tablespoons strawberries or 1 1/2 teaspoon strawberry extract
  • 2 3/4 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup granulated sugar for rolling cookies
  • 1 teaspoon red sugar crystals (optional)

How To Make chewy strawberry sugar cookies

  • Step 1
    Preheat oven to 350ºF
  • Step 2
    Use nonstick cookie sheet or line with parchment paper.
  • Step 3
    Blend together butter and sugar for about 3 minutes.
  • Step 4
    Add egg to butter and sugar blending well.
  • Step 5
    Add strawberries or strawberry extract blending well.
  • Step 6
    Stir in flour, baking powder, salt and vanilla with spoon.
  • Step 7
    Scoop cookie dough by the teaspoon or tablespoon full depending what size you want the cookies. Roll into a ball.
  • Step 8
    Add granulated sugar and red sugar crystals in a large bowl for rolling cookie dough in before baking.
  • Step 9
    Roll each ball evenly, completely coating cookie dough.
  • Step 10
    Place on baking sheet 1 1/2"-2" apart and lightly press each cookie down.
  • Step 11
    Bake 10-15 minutes or until lightly browned.
  • Step 12
    Let cool and eat. ENJOY!
