How to Make Carrot Cookies
- 1In a bowl, cream shortening (not butter) and sugar until light and fluffy.
- 2Add eggs and extract; mix well.
- 3Fold in carrots.
- 4Combine flour, cinnamon, baking powder and salt; gradually add to the carrot mixture.
- 5Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 400 degrees for 8-10 minutes or until lightly browned.
- 6Remove to wire racks to cool. Yield: 4 1/2 dozen.
