How to Make Carrot Cookies
- In a bowl, cream shortening (not butter) and sugar until light and fluffy.
- Add eggs and extract; mix well.
- Fold in carrots.
- Combine flour, cinnamon, baking powder and salt; gradually add to the carrot mixture.
- Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 400 degrees for 8-10 minutes or until lightly browned.
- Remove to wire racks to cool. Yield: 4 1/2 dozen.
