carrot cookies
I want to use up some carrots I had and decided to modify three cookie recipes into one. Happily it turned out great. These cookies are light and airy. Enjoy!

Ingredients
- 1 cup shortening, butter flavor
- 3/4 cup sugar
- 2 - eggs
- 1 cup carrot, shredded
- 1 teaspoon orange extract
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
How To Make carrot cookies

Step 1In a bowl, cream shortening (not butter) and sugar until light and fluffy.

Step 2Add eggs and extract; mix well.

Step 3Fold in carrots.

Step 4Combine flour, cinnamon, baking powder and salt; gradually add to the carrot mixture.

Step 5Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 400 degrees for 8-10 minutes or until lightly browned.

Step 6Remove to wire racks to cool. Yield: 4 1/2 dozen.
