I want to use up some carrots I had and decided to modify three cookie recipes into one. Happily it turned out great. These cookies are light and airy. Enjoy!

Ingredients

  • 1 cup shortening, butter flavor
  • 3/4 cup sugar
  • 2 - eggs
  • 1 cup carrot, shredded
  • 1 teaspoon orange extract
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

How To Make carrot cookies

  • Step 1
    In a bowl, cream shortening (not butter) and sugar until light and fluffy.
  • Step 2
    Add eggs and extract; mix well.
  • Step 3
    Fold in carrots.
  • Step 4
    Combine flour, cinnamon, baking powder and salt; gradually add to the carrot mixture.
  • Step 5
    Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 400 degrees for 8-10 minutes or until lightly browned.
  • Step 6
    Remove to wire racks to cool. Yield: 4 1/2 dozen.
