Canada's 2nd Best Chocolate Chip Cookies

P Gerrits

While watching the news one night, it featured a story of a woman who had just won 2nd place in a national contest with this recipe. I gave it this name to distinguish it from all other recipes I had. It is by far, the best recipe I have ever tried. The milk chocolate gives the best flavour. The low baking temperature is what makes them chewy. This can be done with most cookie recipes. I have added alterations I use for making raisin spice, (my husband's favourite) or triple chocolate. I make 1 1/2 times this recipe for my stand mixer.

1 cup
brown sugar, firmly packed
1 cup
1 cup
butter or good quality margarine ( i use i can't believe it's not butter)
1 tsp
2 1/2 cups
1 tsp
1 tsp
baking soda
2 cups
milk chocolate chips

1Beat butter or margarine and sugars together. Beat in eggs and vanilla.
2Add baking soda, salt and half of the flour. Mix well. Add the rest of the flour and continue to mix until well combined. Mix in chocolate chips.
3Drop by teaspoon onto parchment covered cookie sheets, leaving room for them to flatten and spread. Bake at 325F for 9 to 11 minutes.
4Raisins or dried cherries may be substituted for chocolate chips. Add 1 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp ginger and 1/2 tsp allspice to make a spice cookie.
5For triple chocolate cookies, replace 1/2 cup of flour with cocoa. Add 1/2 of chocolate chips plus 1 cup of white chocolate chips.
