I think the flavor of butterscotch makes you feel so warm so it is perfect for holiday season. So I made these for children my husband takes care as a volunteer hoping these treats make them warm and happy!

Ingredients

  • 9 tablespoons butter, softened
  • 1/3 cup maple syrup
  • 4 tablespoons safflower oil
  • 3/4 cup light brown sugar
  • 1 teaspoon salt
  • 1 tablespoon molasses
  • 1 - egg, large
  • 2 1/2 cups all purpose flour
  • 1/3 cup cornstarch
  • 2 teaspoons baking powder
  • 1 cup butterscotch chips

How To Make butterscotch cookie

  • Step 1
    Line cookie sheet with parchment paper.
  • Step 2
    In a large bowl, whisk together butter, maple syrup, safflower oil, brown sugar, salt and molasses until frosty. Whisk in egg then all-purpose flour, corn starch and baking powder. Mix with rubber spatula to blend well. Fold in butterscotch morsels.
  • Step 3
    Take a spoonful of dough, shape into a ball, place onto the parchment paper and press the top of dough to flatten. Repeat this until the dough is gone.
  • Step 4
    Bake in preheated 350 degrees F oven for 15-17 minutes.
