butterscotch cookie
I think the flavor of butterscotch makes you feel so warm so it is perfect for holiday season. So I made these for children my husband takes care as a volunteer hoping these treats make them warm and happy!

Ingredients
- 9 tablespoons butter, softened
- 1/3 cup maple syrup
- 4 tablespoons safflower oil
- 3/4 cup light brown sugar
- 1 teaspoon salt
- 1 tablespoon molasses
- 1 - egg, large
- 2 1/2 cups all purpose flour
- 1/3 cup cornstarch
- 2 teaspoons baking powder
- 1 cup butterscotch chips
How To Make butterscotch cookie

Step 1Line cookie sheet with parchment paper.

Step 2In a large bowl, whisk together butter, maple syrup, safflower oil, brown sugar, salt and molasses until frosty. Whisk in egg then all-purpose flour, corn starch and baking powder. Mix with rubber spatula to blend well. Fold in butterscotch morsels.

Step 3Take a spoonful of dough, shape into a ball, place onto the parchment paper and press the top of dough to flatten. Repeat this until the dough is gone.

Step 4Bake in preheated 350 degrees F oven for 15-17 minutes.
