butter rum & caramel cake mix cookies
My daughter asked me to make some cookies last night as we were all watching Netflix. She agreed it would need to be simple, as it was late in the evening. I put this together, and everyone was tickled pink with them!

Yield: 1 dozen cookies
Ingredients
- 1 box yellow cake mix
- 1/3 cup butter, melted
- 2 - eggs
- 2 teaspoons rum extract
- 1 teaspoon caramel extract
How To Make butter rum & caramel cake mix cookies

Step 1Preheat oven to 350 degrees, and spray cookie sheet generously with vegetable spray.

Step 2In a stand mixer, mix the ingredients until well blended, scraping the sides and bottom of the bowl. Dough will be thick.

Step 3Make 1-1/2 inch balls and place on the cookie sheet. Flatten each ball with the palm of your hand; but don't squish them down real flat!

Step 4Place sheet in the oven and bake for 10 minutes. Remove from the oven; they will not look brown, and don't touch them, as they will be too soft. Allow to cool on the cookie sheet for about 5 minutes. Remove to cooling rack to cool. Serve! Yummy! NOTE: These would be really good with some toffee bits sprinkled on top...(I didn't have any at the time)!
