I've been on an Oatmeal kick lately...makes everything chewy and yummy...these soft cookies remind me of a banana muffin...so yummy... a great way to use up ripe banana's...enjoy!

Ingredients

3/4 c
crisco
1 c
sugar
1
egg
1 tsp
vanilla
2 large
ripe banana's or 1 cup ( mashed )
1 1/2 c
all purpose flour
1/2 tsp
salt
1 tsp
baking soda
1 tsp
ground cinnamon
1/2 tsp
nutmeg
2 c
quick oats
1 - 1 1/2 c
chocolate chips - i use semi-sweet

How to Make Banana - Oat - Chocolate Chip Cookies

Step-by-Step

  • 1Preheat oven to 375 degree F.

    Cream shortening and sugar until light and fluffy. Beat in egg and vanilla.
  • 2Combine the flour, salt, baking soda, cinnamon and nutmeg.
  • 3Add to creamed mixture and mix well.

    Stir in bananas, oats and chocolate chips.
  • 4Drop tablespoon size portions onto greased cookie sheet and bake for 10 - 12 minutes.
  • 5Remove immediately to wire racks to cool.
