I've been on an Oatmeal kick lately...makes everything chewy and yummy...these soft cookies remind me of a banana muffin...so yummy... a great way to use up ripe banana's...enjoy!

Ingredients

  • 3/4 c
    crisco
  • 1 c
    sugar
  • 1
    egg
  • 1 tsp
    vanilla
  • 2 large
    ripe banana's or 1 cup ( mashed )
  • 1 1/2 c
    all purpose flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    nutmeg
  • 2 c
    quick oats
  • 1 - 1 1/2 c
    chocolate chips - i use semi-sweet

How to Make Banana - Oat - Chocolate Chip Cookies

Step-by-Step

  1. Preheat oven to 375 degree F.

    Cream shortening and sugar until light and fluffy. Beat in egg and vanilla.
  2. Combine the flour, salt, baking soda, cinnamon and nutmeg.
  3. Add to creamed mixture and mix well.

    Stir in bananas, oats and chocolate chips.
  4. Drop tablespoon size portions onto greased cookie sheet and bake for 10 - 12 minutes.
  5. Remove immediately to wire racks to cool.
