banana - oat - chocolate chip cookies

I've been on an Oatmeal kick lately...makes everything chewy and yummy...these soft cookies remind me of a banana muffin...so yummy... a great way to use up ripe banana's...enjoy!

Ingredients

  • 3/4 cup crisco
  • 1 cup sugar
  • 1 - egg
  • 1 teaspoon vanilla
  • 2 large ripe banana's or 1 cup ( mashed )
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups quick oats
  • 1 - 1 1/2 cups chocolate chips - i use semi-sweet

How To Make banana - oat - chocolate chip cookies

  • Step 1
    Preheat oven to 375 degree F. Cream shortening and sugar until light and fluffy. Beat in egg and vanilla.
  • Step 2
    Combine the flour, salt, baking soda, cinnamon and nutmeg.
  • Step 3
    Add to creamed mixture and mix well. Stir in bananas, oats and chocolate chips.
  • Step 4
    Drop tablespoon size portions onto greased cookie sheet and bake for 10 - 12 minutes.
  • Step 5
    Remove immediately to wire racks to cool.
