My late husband's favorite pie, although he was not overly fond of desserts. Developed this recipe after our trip to Ochoa Rios in 1990.

Ingredients

1/4 c
butter
3/4 c
brown sugar, lightly packed
3
eggs
12 oz
chocolate morsels, melted
2 tsp
instant coffee powder
1 tsp
rum extract, or dark rum
1/4 c
flour
1 c
chopped pecans
1/2 c
flaked coconut
1
unbaked pie shell

How to Make Ochoa Rios Pecan Fudge Pie

Step-by-Step

  • 1Make you pie crust. Set aside.
  • 2Make the fudge filling. Cream butter and sugar. Add eggs, one at a time, beating well after each addition.
  • 3Add melted chocolate, coffee powder and rum. Stir in flour, pecans and coconut.
  • 4Pour into your unbanked pie shell.. Bake at 375 degrees for 25 minutes or until done.
