marshmellow topped hot cocoa muffins
My grandkids and I were just hanging out, drinking hot cocoa when we were talking about making a snack. We decided on the snowy day that it was, to make some muffins. We came up with these, and they're so yummy!!

Ingredients
- 1 cup favorite hot cocoa mix, i used swiss miss
- 1 cup flour
- 1/2 cup flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 - lg egss
- 1 cup milk
- 1/2 cup melted butter
- 1 teaspoon vanilla
- 1/2 teaspoon vanilla
- 1 cup mini choclate chips
- 1/2 cup mini marshmellows, cut in half
How To Make marshmellow topped hot cocoa muffins

Step 1Heat oven to 375. Spray a 12 cup muffin tin w/ cooking spray. In lg bowl, combine hot cocoa mix, flour, sugar, baking powder and salt. Mix to combine.

Step 2In another bowl, Beat eggs, milk, butter and vanilla with a whisk. Beat egg mix into cocoa/flour mix just until combined, don't overmix. Stir in chocolate chips.

Step 3Evenly divide into muffin cups. Bake 15-20 mins, or until a toothpick inserted in one comes out clean. Remove from oven. Top w/ halved mini marshmellows. Return to oven for 1-2 mins to soften marshmellows. Serve warm.
