This is one crispy cookie! The pecans, lemon peel and juice gave these a unique flavor. Very tasty!

Ingredients
- 3/4 cup butter, room temperature
- 1 cup sugar, granulated
- 1 - egg
- 1 teaspoon grated lemon peel
- 1 tablespoon lemon juice
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup pecans, finely chopped
How To Make crisp pecan slices

Step 1Thoroughly cream butter and sugar. Add egg, lemon peel, and juice; beat well. Sift together flour, baking powder, and salt. Add to creamed mixture, mixing well. Stir in finely chopped nuts.

Step 2Shape into 2" diameter rolls. Chill thoroughly for about 2 hours.

Step 3Slice thin and place on ungreased cookie sheet. Bake in 350 degree oven for 10 minutes. Cool slightly before removing from pan.
