cherry cordial cookies
My dad is a huge cookie fan and he wanted me to create a cookie that was reminiscent of one of his favorite holiday treats - Cherry Cordials. This is what I came up with. It has turned out to be a VERY popular cookie with family and friends.
Blue Ribbon Recipe
You need these soft sugar cookies on your holiday cookie tray. They have little bits of dried cherries, are topped with a dollop of chocolaty cherry preserves and drizzled with white chocolate. Oh my... they're good. Chewy, chocolaty, sweet, and fantastic.

Ingredients
- 1/2 cup butter, room temperature
- 1 cup sugar
- 1 1/2 teaspoons pure vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup chopped dried cherries
- 1 cup cherry preserves
- 1 cup semi-sweet chocolate chips
- 1/2 cup vanilla or white chocolate chips
How To Make cherry cordial cookies

Step 1Pre-heat oven to 350° F.

Step 2Cream together butter and sugar.

Step 3Blend in egg and vanilla.

Step 4Sift together flour, baking powder, and salt.

Step 5Add to butter mixture along with dried cherries, just until blended.

Step 6Scoop rounded teaspoonsful of dough onto a parchment-lined baking sheet.

Step 7Bake at 350° F. for 10-12 minutes or until lightly golden.

Step 8While cookies are baking, melt cherry preserves. In a microwave-safe bowl, heat cherry preserves on high for one minute in the microwave.

Step 9Using an immersion blender blend the preserves to break up the cherries. Or use a small chopper or fork to mash them.

Step 10Stir semi-sweet chocolate chips into the hot cherry preserves. Continue to stir until chocolate chips are melted and the mixture is smooth.

Step 11Remove cookies from the oven. Using the back of a spoon, immediately form a shallow well on the top of each cookie. Transfer cookies to a rack to cool.

Step 12Spoon chocolate cherry mixture into the wells on top of each cookie.

Step 13Melt white chocolate chips in a double boiler or in a stainless steel bowl set over boiling water.

Step 14Drizzle white chocolate over filled cookies. Allow to cool completely.
