Cherry Cordial Cookies

My dad is a huge cookie fan, and he wanted me to create a cookie that was reminiscent of one of his favorite holiday treats - Cherry Cordials. This is what I came up with, and it has turned out to be a VERY popular cookie with family and friends.

1/2 c
butter, room temperature
1 c
1 1/2 tsp
pure vanilla extract
2 c
all purpose flour
2 tsp
baking powder
1/2 tsp
3/4 c
chopped dried cherries
1 c
cherry preserves
1 c
semi sweet chocolate chips
1/2 c
vanilla or white chocolate chips

How to Make Cherry Cordial Cookies


  • 1Pre-heat oven to 350° F.
  • 2Cream together butter and sugar. Blend in egg and vanilla.
  • 3Sift together flour, baking powder and salt. Add to butter mixture along with dried cherries, just until blended.
  • 4Scoop rounded teaspoonsfull of dough onto a parchment lined baking sheet. Bake at 350° F. for 10-12 minutes, or until lightly golden.
  • 5While cookies are baking, melt cherry preserves. In a microwave safe bowl, heat cherry preserves on high for one minute in the microwave. Using an immersion blender, blend the preserves to break up the cherries, or use a fork to mash them.
  • 6Stir semi sweet chocolate chips into the hot cherry preserves. Continue to stir until chocolate chips are melted and mixture is smooth.
  • 7Remove cookies from oven. Using the back of a spoon, immediately form a shallow well on the top of each cookie. Transfer cookies to a rack to cool.
  • 8Spoon chocolate cherry mixture into the wells on top of each cookie.
  • 9Melt white chocolate chips in a double boiler, or in a stainless steel bowl set over boiling water. Drizzle white chocolate over filled cookies. Allow to cool completely.
