~ Inside Out Almond Joy Balls ~

My Grandma used to make these yummy coconut balls for Easter. I like them anytime. I added the addition of almonds to mine - hence the name.

So easy - enjoy!

  • 1/4 c
    butter, melted
  • 1 1/2 c
    flaked coconut - i use bakers
  • 1 - 1 1/4 c
    confectioners' sugar
  • 1 Tbsp
    coco real - cream of coconut
  • slivered
  • 1/4 c
    chocolate chips, melted - or favorite chocolate

How to Make ~ Inside Out Almond Joy Balls ~


  1. In a bowl mix together the butter, coconut, coco real cream of coconut and sugar.

    Pinch off enough coconut mixture to make a ball, I make mine about the size of a large marble.Shape into a ball. ( if seems too wet, add a little more sugar )
  2. Place on tray. Carefully make an indentation in the top of each ball and fill with chocolate. Sprinkle with slivered almonds.

    Chill until chocolate is set. Best served at room temperature.
